I have a thing for oatmeal as I’m sure you have seen. I started eating steel cut oatmeal when I was nursing my twins and I have seriously been obsessed with it since then. I have a hard time starting my day without it at this point.

I like to make a big batch of steel cut oats to keep in the fridge. That way the mornings are super easy – I just fill a bowl, warm it up in the microwave and add whatever nourishing toppings I feel like.

I make 2 cups of oatmeal and cook it simply, with water. This usually lasts me through the week. However, my kids love it too now so I’m finding myself making it more often. This is super simple but an awesome way to pack in healthy plant-based protein!

Loaded Oatmeal Bowl

A super easy and delicious breakfast bowl, filled with plant-based nourishment.

Ingredients

  • 3 cups cooked steel cut oats I pre-make 2 cups of oatmeal with water according to package instructions to keep in the refrigerator throughout the week
  • 1 kiwi
  • 4 strawberries
  • 1 banana
  • 4 blackberries
  • 1/2 cup shredded coconut
  • 1/2 cup chia seeds
  • 1/2 cup hemp hearts

Instructions

  • Either split just cooked oatmeal into 2 bowls or split refrigerated oatmeal into 2 bowls (1.5cups in each) and warm in microwave for about a minute and 40 seconds. Mix it up and even out the top.
  • After rinsing, slice kiwi (can leave skin on if you choose), strawberries, blackberries and banana and divide between bowls – be as creative as you want!
  • Add coconut shreds, hemp hearts and chia seeds however you wish. Enjoy!
